Eat like a pro: Protein balls

Elevate your snack game like an England Rugby player with chef's coconut coated protein balls.

What you will need (makes 12)

  • 100g oats
  • 50g whey chocolate protein powder 
  • 60g Greek yoghurt
  • 60g peanut butter
  • 5g golden syrup
  • 50g milk
  • 20g dried cranberries
  • 20g chopped dried apricots
  • 40g desiccated coconut (half for dusting)

Method

  • In a mixing bowl, add all ingredients (except for half of the coconut - set that aside for later) and combine thoroughly.
  • Leave the mix in the fridge for 30 minutes to chill.
  • Once the mixture has cooled enough, roll into 12 equal balls
  • Add the other half of the coconut to a bowl and with your hands roll each ball in the coconut to coat the outside.
  • These will last for three days in the fridge.
